Ingredients
Lemon Cupcakes
- ½ cup Butter (1 stick)
- 1 cup Sugar
- 1½ cup Flour
- 2 tsp Baking Powder
- ¼ tsp Salt
- 2 large Eggs
- 1½ tsp Vanilla Extract
- ½ cup Milk
- ⅓ cup Lemon Juice
- 1½ Tbsp Lemon zest
Blackberry Buttercream
- 1 cup Butter (2 sticks)
- 1 lb Confectioner's sugar (5 cups)
- 2 Tbsp Lemon Juice
- 1 Tbsp Heavy Cream
- 2 tsp Lemon zest
- 2 Tbsp Boozy Blackberry Puree (recipe below)
Garnish:
- Blackberries
- Lemon slices
Instructions
For the Cupcakes:
- Preheat oven to 350 F degrees and line a cupcake pan with paper liners
- In a bowl, sift together the flour, baking powder and salt. Set aside
- In a mixing bowl, using a handheld or stand mixer, cream the butter and sugar until light and fluffy
- Add eggs and vanilla extract and mix until well combined,
- Pour the dry ingredients into the wet ingredients and mix on low speed.
- Slowly add the milk, lemon juice and lemon zest. Stop mixing once combined.
- Fill paper liner to ⅔ and bake in the oven for 17-19 minutes or until a toothpick inserted into a cupcake comes out clean
- Remove the cupcakes from the oven and let rest 2 minutes, then transfer to a cooling rack to cool completely.
For the Blackberry Buttercream:
- With handheld mixer or stand mixer, beat butter until light and creamy
- Add confectioner's sugar, lemon juice, heavy cream, zest and blackberry puree, with the mixer on low speed.
- Once combined, increase to high speed and whip for about 3 minutes until fluffy.
Assembly:
- Soak blackberries in your spirit of choice for 20 minutes (Optional)
- Pipe frosting on cupcakes
- Garnish each cupcake with a blackberry and a quarter sliced lemon

- 6 oz Blackberries (fresh or frozen)
- 4 oz Gin Or spirit of choice (rum, bourbon)
Instructions
- Add blackberries and gin to a heavy bottom saucepan.
- Simmer on medium until fruit is soft about 5 minutes.
- Add to a blender and puree until smooth.
- Strain in a storage container and let cool.
