Preheat oven to 350 F degrees and line a cupcake pan with paper liners
In a bowl, sift together the flour, baking powder and salt. Set aside
In a mixing bowl, using a handheld or stand mixer, cream the butter and sugar until light and fluffy
Add eggs and vanilla extract and mix until well combined,
Pour the dry ingredients into the wet ingredients and mix on low speed.
Slowly add the milk, lemon juice and lemon zest. Stop mixing once combined.
Fill paper liner to ⅔ and bake in the oven for 17-19 minutes or until a toothpick inserted into a cupcake comes out clean
Remove the cupcakes from the oven and let rest 2 minutes, then transfer to a cooling rack to cool completely.
