Inspired by the classic Margarita cocktail, this cupcake combines the flavors of Mexico with its tequila lime cake, topped with a tequila triple sec frosting, finished with a rim of Tajin chili lime salt.
Spicy Margarita Cupcake
This cupcake combines tequila, orange liqueur and lime to bring you the flavors of a classic Margarita cocktail. A sprinkle of chili lime salt finishes the cupcake for an authentic experience.
Ingredients
For the Cupcakes:
- ½ cup Sugar
- ½ cup Butter
- 2 large Eggs
- 1½ cups All purpose flour
- 1½ tsp Baking powder
- ¼ tsp Salt
- ½ cup Milk
- 1 tbsp Tequila
- 2 tbsp Lime juice
- 1 tsp Lime zest
For the Frosting
- ½ cup Butter
- 1 lb Powdered sugar
- 1 tbsp Tequila
- 2 tbsp Orange Liqueur Triple sec, Cointreau
For the Garnish
- ¼ cup Chili Lime Salt Tajin or other brand
- Lime slices
Instructions
Cupcakes:
- Preheat oven to 350 F degrees and line a cupcake pan with paper liners
- In a bowl, sift together the flour, baking powder and salt. Set aside
- In a mixing bowl, cream the butter and sugar until light and fluffy
- Add eggs one at a time mixing well after each addition
- Add ⅓ of the flour mixture into the batter
- Once incorporated add ½ of the milk
- Continue incorporating ⅓ of the flour, the remaining milk, finally the last ⅓ of the flour, scraping between additions and making sure to beat until smooth
- Mix in the tequila and lime juice until well incorporated
- Fill paper liner to ⅔ and bake in the oven for 20 minutes or until a toothpick inserted into a cupcake comes out clean
- Remove the cupcakes from the oven and let rest 2 minutes, then transfer to a cooling rack to cool completely.
Frosting:
- In a mixing bowl, using a mixer, beat butter until light and smooth
- Slowly add powdered sugar one cup at a time until incorporated
- Mix in tequila and triple sec
- Whip frosting for 1 minute until light and fluffy
Assembly:
- Pipe a frosting border around the cupcake and roll in chili lime salt mixture
- Pipe frosting to fill in the center
- Garnish with a half slice of lime
